Palestinian cuisine is an ancient cuisine that is the result of the cultures that ruled the territory, namely Turkish, Persian and Arab. It is a kitchen that presents all types of food. Pigeons and lamb are consumed but also a lot of fish and dried fruit and many spices are often used. Meals consist of many small dishes called mezze served all together. Among the best known dishes are Falafel, Baba Ganush, Humus, Bulgur and Cous Cous and among the desserts Baklawa.
