I finally managed to prepare the Strawberry Rhubarb Tart RecipeIt’s a real classic tart. I finally say, because I had never been able to find rhubarb before, so making this cake was an obligation. Likewise, I must say that I really liked it, strawberries are among my favourite fruits and rhubarb enhances the flavour, making this strawberry rhubarb tart filling recipe really delicious!

What is the Rhubarb
The plant of Rhubarb now grows all over the world but comes from the areas of Mongolia and China. In ancient times it was utilized for medicinal purposes by the Asian populations and also as an ornament. Through the colonization of China by the British, it is imported into the rest of the world, also spreading as an ingredient for the preparation of various dishes.
The part of the plant that is utilized in alimentary field is that of the coasts, of a pink, red/bright fuchsia colour, are very similar to those of the thistles and of the celery. The long coasts are used for the preparation of salads, or cooked in sweet and sour. The most common sweet preparations are Pie with Rhubarb and Strawberry or with only rhubarb, compote or jam, or in accompanying sauces.
It is also used in the preparation of herbal teas and in the manufacture of balsamic or herbal candies. It’s a plant with many healing properties, such as ointment and useful for wounds and burns, as a digestive, or to treat bowel infections. Strawberry Rhubarb Tart Recipe
Attrezzature
- Hinged Cake Pan 7 x 22 cm Ø
Ingredienti
- 500 g Short Pastry for Pie
- 650 g Strawberries
- 350 g Rhubarb
- 1 Lemon Peels grated
- 20 g Butter
- 30 ml Strawberry Liqueur optional
- 50 g Cornstarch
- 15 g Stevia
- 50 ml Milk
Preparazione
- Put the shortbread for pie out of the fridge.
- Wash and clean the strawberries and cut into 4 parts. Take the rhubarb and wash it, with a knife remove all the filaments from the inside and outside, as for the celery. Once cleaned, cut it into pieces and put it to cook for 5 minutes in water.650 g Strawberries, 350 g Rhubarb
- Cover with butter and flour a Hinged Cake Pan (7 x 22 cm). Take the pastry and roll it out with a rolling pin and put it in the pan leaving the edges high.500 g Short Pastry for Pie
- Once cooked, drain the rhubarb. Melt butter in a pan and sauté rhubarb with strawberries, grated lemon peel, stevia and strawberry liqueur. Once softened the strawberries, add the cornstarch and mix well.1 Lemon Peels, 20 g Butter, 30 ml Strawberry Liqueur, 15 g Stevia, 50 g Cornstarch
- Heat the oven to 180 °C.
- Take the filling and pour it into the pan, arrange it so that there are no free spaces and fold the edges over the cake and decorate with the remaining dough.If you want you can close it completely or leave it open and / or decorate it as you like. Brush it with milk and sugar.50 ml Milk
- Bake in static oven for 45 minutes and then leave in the oven for another 10 minutes. Let it cool as much as possible before cutting it, otherwise you will not give time to the filling to firm up.
