Sesame Seed Milkis truly a beautiful and very good discovery. Creamy, delicious and refreshing, it is a very easy drink to prepare at home, which requires few ingredients, perfect to quench your thirst with taste!

What Is Horchata
Horchata is a drink generally made from water, seeds or nuts and spices. It is thought that the first known variety is of the Arabs, most likely using almonds, obtaining Almond Milk. After the arrival of the Arabs in the Spanish territories, this drink spread throughout the country under the name of Orxata, where almonds are replaced by Tiger Nuts or also called Chufa, thus becoming Orxata de Chufa.
From Spain it spread to the South Americas and some Caribbean islands thanks to the conquistadors. Depending on the country, different types were created, the most famous are certainly the one based on rice, the one with rice and almonds and this one with sesame seeds or the Horchata De Ajonjolí.
It’s not a drink that is normally marketed in supermarkets or the like, the main reasons are two, it is very easy to prepare and has a short duration of 3-4 days. Usually street vendors prepare large quantities of it the day before to sell it the next day, or you can always find it freshly prepared and served in typical restaurants.
How To Make Sesame Seed Milk
Making the Sesame Seed Milk at home is really simple. Usually white sesame seeds are needed but if you want you can use black ones, brown sugar, or agave syrup. In some recipes I have also seen the use of sweet condensed milk. The choice is subjective personally I find that cane sugar is the best, it does not change the taste but enhances it without being too sweet.
Spices can also be used, the most used is certainly cinnamon which can be removed before blending or left inside. Other spices are vanilla, cloves or star anise, the latter two are removed before blending everything.
To prepare Sesame Seed Milk, put the seeds in water for one night or already in the morning, so that they soak for about 12 hours, if you want to spice it, choose the spice or mix of them you want and put them in the water together with the seeds. The next day, remove the spices and blend everything for about ten minutes, filter, add the rest of the water and sugar to taste. Bottle and consume the next day so that it can release all the flavor of the sesame and the aroma of the spices. It keeps in the fridge for 3-4 days and after that it could start to ferment.
Once the Sesame Seed Milk has been filtered, don’t throw away “the scraps” but prepare some crunchy or a sweet like biscuits.

Sesame Seed Milk – Horchata De Ajonjolí
Ingredients
- 800 ml Water
- 700 ml Water
- 200 g White Sesame Seeds or Black Sesame
- 3 Tbsp Sugar Cane less or more to taste
- 3 g Salt
Flavoring Ingredients of Choice
- 1 Cinnamon
- 4 Cloves
- 1 Star Anise
- 1 Vanilla Bean
- 300 g Condensed Milk
- q.s. Agave Syrup
Instructions
- Soak the sesame seeds in 800ml of cold water for 12 hours or just the day before. If you want to add one or more flavorings, put them in the water along with the seeds. If you choose vanilla, remove the seeds and add them to the water and then add the pod.800 ml Water, 200 g White Sesame Seeds
The day after…
- Put the seeds and the soaking water and half of the rest of the water in the blender. Before blending, remove the spices, in the case of cinnamon some blend it with the seeds but you choose whether to remove it or not.700 ml Water
- Run the blender and blend for 5-7 minutes at medium and then high speed.
- With a colander and perhaps with the help of a muslin cloth or a stamina filter everything, squeezing the cloth well or with the help of the back of a spoon if you only use a colander.
- Add the rest of the water and the sugar of your choice (cane, agave or condensed milk). Mix well, bottle it and chill it in the fridge.3 Tbsp Sugar Cane, 3 g Salt, 700 ml Water
- To ensure that it is at its best, it would be better to leave it in the fridge to rest for one night, but it is also good eaten immediately with ice.
- It can be kept in the fridge for a maximum of 3-4 days, after which it will begin to ferment.
