Tired of the usual bread? Here’s the Parmesan Bread with Walnuts! A tasty idea to present at the table during the holidays or for a day when you want something more than everyday bread, also ideal for preparing a nice sandwich with an extra gear.

Preparing the Parmesan Bread

The preparation of Parmesan Loaf, doesn’t require too much work, but like any bread has the need to rise.

As a first step I prepared the yeast mixture, crumbling the fresh yeast into a bowl and melting it with a part of warm water and making it rest for about 10 minutes so that it activates. If you don’t have fresh yeast, just replace it with dry yeast, find the doses in the recipe box below.

I chopped the nuts coarsely to have pieces of different sizes. Once ready, I mixed them with flour, adding Parmesan, salt and black pepper in a bowl. After the 10 minutes I added the lard, the yeast and the remaining water and I kneaded everything. I wanted to use the lard but if you prefer you can replace it with olive oil, find the dose in the box of the recipe below. Obtained a homogeneous dough, let it rise in the oven covered by a towel for an hour.

After the hour I took the dough for the Parmesan bread and kneaded it for a few minutes to let out the air and then divided into 8 loaves (obviously you can divide it more or make a single shape). And then, to rise for another hour on a baking sheet with baking paper. Finally cooked and cooled on a grill.

Parmesan Bread With Walnuts

Delicious bread with the scent of Parmesan cheese enriched with delicious and crispy walnuts.

Ingredienti

  • 250 g Bread Flour
  • 250 g All Purpose Flour
  • 30 g Fresh Yeast or 10 g dry yeast
  • 1 tsp Caster Sugar
  • 250 – 280 ml Water warm
  • 150 g Parmesan Cheese grated
  • 150 g Walnuts Shelled and roughly chopped
  • 1 – 2 tsp Salt
  • 30 g Lard or 50 ml of Extra Virgin Olive Oil
  • to taste Black Pepper

Preparazione

  • In a bowl, crumble the yeast, add the sugar and dissolve with a part of warm water. Let stand for 10 minutes.
    30 g Fresh Yeast, 1 tsp Caster Sugar, 250 – 280 ml Water
  • In a bowl, mix the two flours, parmesan cheese, coarsely chopped walnuts, salt and pepper.
    250 g Bread Flour, 250 g All Purpose Flour, 150 g Parmesan Cheese, 150 g Walnuts, 1 – 2 tsp Salt, to taste Black Pepper
  • Add the lard (or oil), yeast, the remaining water and knead until you get a homogeneous dough. Let rise for 1 hour.
    30 g Lard, 250 – 280 ml Water
  • Work the dough on a floured surface for 2 – 3 minutes. Divide it and form 8 loaves equal.
  • Put them on 2 greased baking pans or lined with parchment paper, distant from each other, and cover them with a kitchen towel, leaving them to rest for 1 hour.
  • Heat the oven to 220 ºC, once hot bake loaf for 25 minutes.
  • Once cooked, bake and let cool on a grill.
