Gluten Free Apple Muffins Cranberry and Figs

For breakfast, today I made you some Gluten Free Apple Muffins Cranberry and Figs! With the arrival of September, you can taste figs! They are one of my favorite fruits and the black ones are the end of the world. Unfortunately I don’t find them as often as I would like, but since I found plenty of them this time I wanted to use them for these blueberry muffins.

These Gluten Free Apple Muffins, I din’t prepare them using the classic recipe, I wanted to experiment a little and so first, away the flour! I used oat flakes instead! Using oats instead of pastry flour, they will also be suitable for those who don’t want or cannot consume gluten. In addition to this, they are without butter and instead of sugar I used honey. So I would say they are also perfect for vegetarians.

Gluten Free Apple Muffins Preparation

I often see gluten-free products in the supermarket and honestly find them a little sad. Not that I need to avoid gluten, but I like to taste things I don’t know out of simple curiosity. So the question arose “How to get a light but good and gluten-free breakfast cake?”. Researching on the internet, I found some tasty ideas and putting them together I got these delicious treats.
These gluten-free muffins are a real revelation, they are light and moist thanks to the grated fruit used in the dough. I used apple but maybe you can use pineapple, ripe bananas or maybe peaches.

The result is certainly different, in fact I recommend that you use the pan directly, because in the cups it tends to stick due to the absence of butter. It will form a crunchy crust with the pan, but if you are unsure brush it with coconut butter or vegetable oil. Two other ingredients of the mixture of Gluten Free Apple Muffins that you can replace, are milk and yogurt respectively with vegetable milk, I recommend the almond or toasted almond one and the soy milk yogurt in order to make them lactose-free in the in case you are intolerant!

Gluten Free Apple Muffins Cranberry and Figs

  • 215 g Oatmeal
  • 200 ml Milk
  • 70 g Dried Cranberries
  • 5 Black Figs
  • 2 Apples
  • 70 g Greek Yogurt
  • 90 g Honey
  • 1 tsp Vanilla Extract
  • ¼ tsp Cinnamon
  • 2 tsp Cake Yeast or baking powder


  • Grate the apples and cut two figs into pieces. Slice the other three into slices about half an inch thick and set aside.
  • Preheat the oven to 175 °C.
  • Beat the eggs with the yogurt, honey and vanilla.
  • Add the oats, salt, baking powder and cinnamon mixing well. Incorporate the apples and milk.
  • Add the pieces of figs and the dried cranberries and mix gently so as not to pulp the figs. Butter the muffin tin and fill with the batter.
    Garnish each muffin with two slices of figs and bake for 35 to 40 minutes.
