Of all the possible side dishes, potatoes are certainly the sovereign. Today’s recipe includes Crispy Skillet Potatoes With Herbs, with a little thinly sliced bacon, cooked first in water and then in a pan to make them crispy.

Herb potatoes are a perfect side dish, in my imagination I see them next to a succulent steak, thick and delicious, but obviously they are suitable to accompany meat and fish dishes in general. However, potatoes are not really quick to cook if not fried, and in a pan unless they are few it takes a while, so how to make skillet potatoes more quickly? Simple by boiling them first!

Let’s start with some new potatoes, you can use the small ones or the large ones like I did. To make them cook more quickly I cut them into small cubes, if you use the small ones just cut them in 2 or 4. Cook them in boiling salted water for about 15 minutes and drain. Let them drain well so that they dry, this will allow you to get crispy sauteed potatoes on the surface. Cut the bacon and finely chop the herbs.

Now that everything is ready, heat a large skillet well, and start melting the butter, fry the bacon along with the freeze-dried garlic. When it starts to brown, add the potatoes. Mix them delicately to flake them as little as possible so that they season well and then let them brown for a few minutes without turning them so that the starch of the potatoes caramelizes together with the butter to form a brown – golden crust. You will notice this because the sound of the sizzle will change. Now always turn the potatoes gently and repeat the operation several times until you get beautiful pan fried potatoes.

Once ready, add the fresh herbs and salt, mix and serve the seasoning potatoes accompanied by a lemon or lime wedge.

These skillet potato recipes are great eaten hot or lukewarm as they are cooked in butter. The herbs I used are all fresh, mint, parsley, coriander and basil finely chopped and added when cooked, in this way they will release their delicious flavor and aroma. If you want you can sprinkle them with a drop of lemon to give them an edge but they are also excellent without.

  • 1 kg Potatoes early, big or little
  • 100 g Bacon
  • 50 g Butter
  • 5 g Dry Garlic
  • 30 g Mint fresh
  • 30 g Basil fresh
  • 30 g Coriander fresh
  • 30 g Parsley fresh
  • q.s. Salt
  • q.s. Limes wedge or lemon wedge


  • Wash and cut the potatoes into cubes, if they are large, cut them into 2 cm cubes if they are small new potatoes, cut them into 4.
  • Cook the potatoes in hot salted water for 15 minutes.
  • Coarsely chop all the fresh herbs as well as the bacon and set aside.
  • Once the potatoes are cooked, drain and drain them well.
  • Melt the butter in a large and very hot pan, add a teaspoon of garlic powder and let it brown. Once the bacon has started to brown, pour in the potatoes.
  • Gently mix with the butter and bacon being careful not to break them too much, let them brown for a few minutes until that side is golden.
  • Now always turn them gently and brown them again, continue until they are all beautifully golden.
  • Once ready, pour in the fresh herbs and always mix gently and turn off the heat.
  • Serve hot potatoes accompanied by lemon or lime wedges to squeeze, they will give it an edge!
