A perfect dish for a dinner party is definitely Beef And Noodle Stir Fry with Green Beens. What more could be desired? Of course, two bowls! A dish of sautéed Japanese udon, crispy green beans and succulent beef chunks, all topped with fragrant curry and a drizzle of fish sauce. Plus, it’s quick and easy to prepare, perfect for those times when you’re hungry and craving something good without having to cook for hours!

For this beef noodles recipe, I used udon, which are Japanese noodles that look like large noodles and are made from wheat flour. They have the peculiarity of being very soft, are very digestible and lend themselves well cold, sautéed or in broth. Once sautéed, they will give creaminess to the dish and making all the flavours blend perfectly.

And you can make this recipe with other dry noodles such as Chinese egg noodles or ramen. Or you can opt for dry ones including soba, rice noodles, or mung bean noodles, the choice is yours!

Beef and Noodle Stir Fry

Put a pot with plenty of water on the stove. Prepare the green beans by washing them and removing the ends. Cut them into about 3 cm pieces. When the water is hot, blanch them for 10 minutes and drain them without throwing away the water.

Cut the beef tenderloin into half-inch-thick slices, and then in half again.

In a bowl, mix all the ingredients for the sauce and keep it on hand. Heat a pan with oil and sauté the rosemary, after a couple of minutes remove the sprig and brown the meat over medium heat, and add the curry powder, garlic powder and mix well. In the meantime the water will have come to a boil cook the udon noodles according to the package instructions, be sure not to salt the water.

Once the meat is browned, add the green beans and pour in the seasoning, sauté, and later, remove the pan from the heat, so the meat does not dry out too much. Cook the udon, drain them and cool them underwater. Sauté them with the meat and green beans for a couple of minutes. Serve in a bowl and sprinkle with the sesame seeds and chopped spring onion.

  • 200 g of Fresh Udon
  • 150 g of Beef Fillets or minced beef
  • 100 g of Green Beans
  • 1 tsp of Curry
  • 1 pinch of Rosemary
  • 1 pinch of Dry Garlic
  • 1 Bay Leave
  • 1 Green Onions only green part
  • White Sesame Seeds
  • 2 Tbsp Corn Oil
  • 1 ladle of Water


  • 2 tsp of Soy Sauce
  • 2 tsp of Sriracha
  • 3 tsp of Fish Sauce
  • 1 pinch of Thyme


  • Put a pot with plenty of water on the stove.
  • Clean and wash 100 g of Green Beans and then cut them into small pieces. Put them in hot water and blanch them for 10 minutes. Drain them, but do not discard the water.
  • Cut 150 g of Beef Fillets into ½-inch slices, then halve again.
  • In a bowl, combine 2 tsp of Soy Sauce, 2 tsp of Sriracha, 1 pinch of Thyme and 3 tsp of Fish Sauce, mix well and set aside.
  • Cook 200 g of Fresh Udon in the water in which you cooked the green beans according to the time indicated on the package, without adding salt.
  • In a frying pan, heat 2 Tbsp Corn Oil and sauté with 1 pinch of Rosemary. After a few minutes, remove them and put and brown the meat with 1 Bay Leave over medium heat, add 1 tsp of Curry and 1 pinch of Dry Garlic, stir well.
  • Once the meat is browned, add the green beans, pour in the seasoning and sauté. When everything is well combined, remove the pan from the heat to prevent the meat from drying out.
  • Drain the udon, cool them under cold water and stir-fry them with the meat and green beans for a few minutes with 1 ladle of Water. Serve in a bowl and sprinkle with White Sesame Seeds and 1 Green Onions finely chopped.
