Want a nice grilled meat, but don’t know how to flavor the meat or make it original? Here is the solution! Three delicious mixes of American-style Barbecue Rubs! Chicken, steaks and meat in general will no longer be boring thanks to these DIY spice mixes! They are really easy to prepare and you can keep them in an airtight jar and have them ready for use at any time. Now in supermarkets the products for preparing American-style barbecues are increasingly popular, but some of them can be prepared safely at home, saving and having even more of them than the packaging on the market!

The Dry Rubs

Dry Rub as they are called in America, are a mix of spices, to season specic foods. In this case, they are spices for meat and chicken designed mainly for cooking on the barbecue / grill, but why not, even on the iron plate or in the oven if necessary. Making them is quite simple in the end it is just a matter of mixing various spices together, the most complex part we say is balancing the various quantities. The spices for grilled meat that I propose in this article I have prepared and tested in various ways.

The first is a mix of Spices for Chicken (center)

It’s a spicy mix, but not too much. Perfect for chicken, turkey, chanterelles, etc. It gives the meat a spicy and sweet taste. The sugar inside caramelizing during cooking will create the typical crunchy crust. Excellent combined with Worcestershire and / or Liquid Smok, a dark liquid that gives food the characteristic flavor of American-style smoking. It’s obtained naturally thanks to the combustion of wood, nothing chemical.

The Second is a Mix of Spices for Meat (left)

A little spicy mix, but with strong notes of cumin and turmeric excellent for seasoning steaks of all kinds, but also roasts and stews.

The Third is BBQ Rub (right)

This mix adapts well to everything. Mixed with minced meat to make tasty burgers, on pork ribs, but also on chicken. During cooking the aromatic notes of fennel seeds come out. This bbq rub is rich in sugar so during cooking it will tend to create a dark crust on the meat due to caramelization, so keep an eye on the meat especially if you cook them in the oven or on the grill.

These Barbecue Rubs, of course, can also be used on other foods, for example on roasted potatoes, fish such  salmon etc! All three are great for creating more sauces, for example combining the liquid smok, Worcestershire, the different types of tabasco, mixed with tomato concentrate and cooked to create an accompanying sauce. Have fun experimenting with different combinations!

Ingredients

Spices for Chicken

  • 100 g Sugar Cane dark
  • 40 g Sweet Paprika
  • 5 g Black Pepper ground
  • 20 g Salt
  • 7 g Chilli Powder
  • 10 g Dried Onion
  • 9 g Dry Garlic
  • 5 g Cayenne Pepper alternatively strong paprika or chilli pepper not too spicy
  • 5 g Dry Parsley

Spices for Steaks

  • 1 tbsp Cumin
  • 1 tbsp Sweet Paprika
  • 1 tbsp Dry Parsley
  • 2 tsp Coriander Seeds
  • 2 tsp Turmeric
  • 1 tsp Dried Onion
  • 5 g Salt
  • 5 g Black Pepper ground
  • 5 g Cayenne Pepper alternatively strong paprika or chilli pepper not too spicy
  • ½ tsp Dry Garlic

BBQ Mix

  • 40 g Sweet Paprika
  • 2 tbs Chilli Powder
  • 20 g Caster Sugar
  • 20 g Sugar Cane dark
  • 2 tsp Fennel Seeds
  • 2 tsp Black Pepper ground

Instructions

Spices for Chicken

  • Ground, pepper, pulverize the garlic and onion with a mortar in case you have them in akes. Take a jar and add all the ingredients inside. Close and shake to mix everything well.

  • Grind pepper, coriander seeds, garlic and onion. Add everything in a bottle and shake to mix.

  • Add all the spices and ground pepper in a jar and mix.
