Central America Cuisines are influenced by Mayan, Aztec, Hispanic and African culture. On a culinary level, Mexico is part of this type of cuisine even though it is geographically included in North America. They are rich in flavours given by spices and can also be very spicy considering the countless types of chillies.
The Historical Contaminations
One hundred America was populated by the Maya and the Aztecs, who had their own crops and eating habits. Corn was the main crop, it was present in every meal. The dishes of Central America Cuisines almost always include meat or fish and vegetables, often accompanied by rice and beans. They are also accompanied by flour or corn tortillas, but there are also vegetable and meat soups. Usually all fish and seafood food is referred to in the Veracruz style.
Despite the sad past of the territory, in some areas is still consumed the Comida Prehispanica, that is the way of eating of the ancient Athechi and Maya.
